What I Eat When I'm Poor: Liver and Carmelized Onions*

Posted By Jude C on Oct 29, 2008 at 6:04PM

If you like liver, this is a great, easy (1 prep step, 1 dish), and super cheap meal when you're, you know, a little bit poor.

Even if you're not fond of liver, one thing to remember is that the reason a lot of people don't like liver has to do with it being overcooked. Overcooked liver has an unpleasant texture and bitterness. I cook it quickly enough that, while it isn't bleeding by any means, it has a much softer texture and flavor that's a lot less "gross."

This is extremely healthy. Liver is packed with all kinds of vitamins, and onions have been shown to be full of the flavonoid antioxidants that protect against certain kinds of cancer (especially the very pungent onions--the more your eyes water as you cut them, the healthier the onion!).

If you're super grossed out by liver, though, then this is definitely not for you.

*According to my fiance, this is the most disgusting thing I eat, but I can't be the only one who likes liver, right?

I am such a carnivore!

This sounds like the perfect group for me :D because sometimes I feel a bit bad about being such a carnivore!

I'm not a fan of carbs. I'll eat pasta, but typically only when there's some yummy cream sauce and either copious amounts of seafood or meat involved, and bread is sort of useless in my book unless there's lots of meat sandwiched between the slices :)

Give me an ultra-rare ribeye or slice of prime rib any day--or some delicious BBQ ribs or pork chops or ham--and I'm all set :feedme:

A little veggie always goes well with meat.

This is my 1st - I have no clue what I'm doing except that I like to eat! Cooking is a big part of my life, hubby loves it also.

The marinate is really good and helps to spice up the meat for a nice change.

I was just browsing the new groups and ran across this one. Most of the other groups are "healthy" and how to eat better. This is most unique. I can't wait to see what people post here!
